gyuto , “stampless” , the blade is forged with mystery steel ( I know exactly what it is of course :) , from 80’s stock , very hi carbone steel and a touch of Cr )
water quenched, very hard egg and goo cutting capacity. I only have few Kg of this steel…
larger kasumi bevel than my usual grind. it’s regular ish.
