Bienvenue dans Tanin.
J’avais envie de créer un rendez-vous un peu différent, plus personnel, pour vous tenir au courant de la vie de l’atelier.
Vous y trouverez bien sûr les mises à jour du site avec les nouveaux couteaux disponibles, mais aussi un disque à écouter (celui qui tourne en ce moment à l’atelier), et parfois un plat ou une bouteille que j’ai particulièrement aimé.
Une façon de partager un peu plus que de l’acier et du feu…
Welcome to Tanin.
I wanted to create a slightly different kind of rendez-vous, something more personal,
to share news from the life of the workshop.
Here you’ll of course find updates from the website with newly available knives,
but also a record to listen to (the one spinning in the workshop at the moment),
and sometimes a dish or a bottle that I’ve particularly enjoyed.
A way of sharing a little more than just steel and fire…

À côté de l’acier et du bois, il y a toujours de la musique à l’atelier.
À chaque numéro de Tanin, je partagerai un disque à écouter : jazz, electro, hiphop , ou tout autre chose.
Des albums très différents, selon l’humeur, la saison ou l’ambiance à l’atelier,
qui tournent pendant que je forge, que je suis au polissage.
-Art Blakey : Buhaina’s Delight
Un hard bop chaud et élégant, porté par la batterie d’Art Blakey.
Un disque qui donne un bon rythme pour travailler sans se presser,
parfait pour les finitions .
-Madlib : Stormy sur l’album Shades of Blue
Un morceau lent et feutré.
Des boucles douces, un groove discret, un son un peu voilé.
Idéal pour plier la journée.

Alongside steel and wood, there is always music in the workshop.
In each issue of Tanin, I’ll share a record to listen to — jazz, electro, hip-hop, or something else entirely.
Very different albums, depending on the mood, the season, or the atmosphere in the workshop,
playing while I’m forging or polishing.
– Art Blakey: Buhaina’s Delight
A warm, elegant hard bop album, driven by Art Blakey’s drumming.
A record that sets a good pace for working without rushing,
perfect for finishing work.
– Madlib: “Stormy” (Shades of Blue)
A slow, soft-edged track.
Gentle loops, a discreet groove, a slightly veiled sound.
Perfect for winding the day down.
The glasses
Percé-Voilé, Le Nez de Goth (Olivier Boulin)
Un riesling ancien (vigne de 61 ans).
Le vin a été fait très lentement : quelques jours en caisse, un pressurage direct long,
puis presque trois ans d’élevage entre fûts ouillés et fûts sous voile,
avant un dernier passage en cuve.
Cela donne un vin bien équilibré, aux notes oxydatives délicates
et à la belle acidité, bien placée.
Un grand riesling, à boire lentement.
The wine was made very slowly: a few days in boxes, a long direct pressing,
then almost three years of ageing between topped-up barrels and barrels under flor,
before a final rest in tank.
This gives a beautifully balanced wine, with delicate oxidative notes
and a fine, well-placed acidity.
A great Riesling, to be drunk slowly.
